Our Philosophy
We source from twenty-three small-batch producers across France and Japan. Our butter arrives from a single农场 in Normandy. Our wagyu is traced to the exact ranch in Miyazaki. Nothing is chosen casually. Everything is chosen with intention.
The kitchen operates without menus printed daily. Instead, our team gathers each morning to assess what's at its peak — and builds the evening's journey around those ingredients. Flexibility is not compromise. It is the point.
